Executive Chef

What we are looking for

Our hotel is looking for an experienced executive chef to lead our culinary team. In this position, you will be responsible for the creation of fresh, healthy, innovative menus for all food and beverage outlets including the restaurant, bar, banquets, catering and in-room dining, with a focus on high quality and presentation.

Our perfect candidate has significant culinary experience in a high-end facility or hotel, as well as proven leadership skills. While a culinary arts degree is not essential, formal training is a plus.

The Westin Bear Mountain Resort & Spa, Victoria, is a world-class 5-star property with 91 rooms, two restaurants and a bar and lounge area, a 300-person ballroom as well as meeting and conference facilities with several amenities including a new state of the art Spa. We are a Westin branded hotel that falls under the Marriott umbrella.

About the job

·        Oversees food operations, which encompass banquet, culinary, and room service operations, as well as maintaining product and service quality levels while maximizing profits.

·        Prepares annual food budget and monthly forecasts for food needs and expenses along with performing human resource functions including scheduling, evaluating, and training staff.

·        Manages the flow of labor and cost of goods in achievement of profitability goals.

·        Ensures all costs and expenses are maintained within budgetary guidelines ratios, productivities and costs, i.e. food costs, , payroll productivities and other expenses

·        Executes required operating procedures, checklists, scheduling, timekeeping, and other control measures such as inventory.

·        Develops and maintains close and effective working relationships with all departments

·        Ensures that regular, on-going communication occurs in all areas of food and beverage (e.g., pre-meal briefings, staff meetings, culinary team).

·        Communicates and executes the expectation of department to F&B leaders and associates: revenue objectives, service quality, departmental procedures and standards.

·        Delivers products and services to meet or exceed the needs and expectations of the brand’s target customer and property employees and provides a return on investment.
